Soft Pumpkin Cookies

Cook time: 15 – 20 Minutes Print Soft Pumpkin Cookies
  • 2 1/2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 1/2 tsp. pumpkin spice
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 cup butter soften
  • 1 1/2 cup sugar
  • 1 cup solid pack pumpkin
  • 1 egg
  • 1 tsp. vanilla


In medium bowl combine flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside. In large mixing bowl, cream butter and sugar. Add pumpkin, egg, and vanilla. Mix well. Add dry ingredients and mix well. Drop by rounded tablespoon onto greased cookie sheet. Bake in oven at 350 F. for 15 to 20 minutes.

Glaze for Cookies:

In a small bowl, combine 2 cups powdered sugar, 3 tbs. mik, 1 tbs. melted butter and 1 tsp. vanilla. Blend until smooth and spread over the cookies.
